Mix rice vinegar, sugar and salt in a saucepan. Heat until the sugar dissolves, and wait for the mixture to cool. Place the rice in a wooden bowl, and pour the vinegar. Use a spatula to mix the rice.

Using a bamboo rolling mat, place a sheet of nori wrapper, and spread the sushi rice on it. Put the filling on top of the rice-you can use mangoes, cucumber, fish, crabmeat, or any other ingredient that you prefer. Roll the mat, pressing forward. When the mat has completely rolled, unroll it and you will find a long cylindrical-shaped sushi. Cut into small pieces (sushi rolls) and serve right away.
